FYI: Kwablo is the combination of the hubby’s and my names.

I was going to post a couple of food pics from our Taco Tuesday/Cinco de Mayo “celebration”, but I was so hungry that I did not take any pictures of the food. I will say that our tacos were pretty good though. However, I did take a shot of my Watermelon-Basil Margarita.

For the rest of the summer.  spring and summer, I’m going to add frozen watermelon cubes and basil to all of my homemade cocktails.

The DIVOC: gin, vodka, tequila, (or insert your liquor of choice), a few frozen watermelon cubes, a few muddled basil leaves, and a splash of seltzer water. In addition to the springy/summery taste, the frozen watermelon cools down the beverage so you do not have to worry about those pesky water ice cubes diluting your beverage. An added bonus: since the watermelon is quite fleshy and spongy, it will absorb the liquor so you  will get an additional buzz while eating the watermelon chunks

  1. Yum! We didn’t celebrate the holiday though we had pork tacos the previous week. We’re hoping a local restaurant, Mexitaly, opens again soon for curbside takeout. It’s always challenging deciding what to order from them though as they serve both Italian foods like wood-fired pizza and Mexican foods like tacos and burritos (hence the name) and it’s all amazing!
